1 cup diced Freeze-Dried Apple Chunks

1 cup oat flour

2 eggs

1/3 cup maple syrup

1/3 cup olive oil

2 tbsp ground ginger

Optional: a few tbsp sugar to sprinkle on top
Directions:
Add all ingredients to a medium mixing bowl.
Mix until combined.
Lay a sheet of parchment paper on a cutting board. Add dough on top. Add another layer of parchment paper on top.
Use a rolling pin to roll dough out.
Use cookie cutters to cut cookies.
Lay cookies on a parchment-lined pan. Add sugar on top of cookies if using.
Bake at 350°F for 10-15 minutes.
